Harissa Lamb Burgers with Whipped Feta and Rainbow Ribbons

    Burger Patties

  • 16 ounces ground lamb
  • 4 ounces feta cheese, finely crumbled
  • 1 tbsp. prepared Harissa spread
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 4 large hamburger buns or rolls, split and toasted
  • Whipped Feta Spread

  • 2 ounces cream cheese
  • 2 tablespoons milk
  • 1 tbsp. lemon juice
  • 1 tsp. lemon zest, finely grated
  • 1 clove garlic, minced
  • 1 tbsp. olive oil
  • 1/4 tsp. cracked black pepper
  • 4 ounces feta cheese
  • Rainbow Ribbons

  • 1 seedless cucumber, cut into thin strips and spiralized
  • 1 carrot, cut into thin strips or spiralized
  • 1/2 red bell pepper, thinly julienned
  • 1/2 tsp. Harissa, prepared
  • 1 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 1/4 tsp. salt


  • Preheat and grease outdoor grill or cast-iron grill pan to medium-high.
  • Combine all burger patty ingredients, mixing gently until well combined. Form into 4 large burger patties. Grill for 3-5 minutes per side, until desired internal temperature is achieved. Set aside.
  • In a large food processor, combine all whipped feta spread ingredients and process until smooth. Spread a generous amount of whipped feta on each burger bun.
  • Combine all Rainbow Ribbon ingredients in a mixing bowl. Toss well to coat vegetables with dressing.
  • To assemble burgers, place grilled patties on top of bun bottoms, top with rainbow ribbons, and place feta spread bun on top. Serve warm and enjoy!
