Greek Pasta Salad with Feta & Sausage

    Pasta Salad

  • 1 pkg. Nikos Traditional Feta, crumbled
  • 1 pkg. buffalo style chicken sausage, halved
  • 1/4 c. red onion, thinly sliced
  • 1 c. grape tomatoes, halved
  • 1 medium green pepper, chopped
  • 1/2 c. white mushrooms, sliced
  • 1 cucumber, chopped
  • 1 box spiral pasta
  • Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons white vinegar
  • Pinch salt, pepper, and herbs de Provence
  • 1 tbsp. Nikos Feta cheese, crumbled



  • Whisk together all ingredients and pour over dish as needed.
  • Pasta Salad

  • Boil pasta until al dente; rinse under cold water, and drain. Add chopped and sliced veggies to the drained pasta.
  • Cook halved sausages on the grill 3-5 minutes each side on medium heat. Chop up sausage then add sausage, feta, and dressing to the pasta. Can serve warm or at room temperature.
