Pepper Quesadillas

  • Yield: 1 - 2 Servings


  • 10 8 8” flour tortillas
  • 8 slices (about 8 oz.) Pepper Jack cheese
  • Vegetable oil
  • Prepared salsa, guacamole and sour cream as desired for serving


  • Place one tortilla on the work surface. On one side of the tortilla place 3 slices of cheese and fold the other side of the tortilla on top of the cheese. Repeat with the remaining tortillas and cheese. Heat a large skillet with about 1 tablespoon of oil. Place 2 quesadillas (or more if there is room) in the pan. Cook for 1 minute or until golden brown on one side. Using a spatula, flip over and cook until golden brown. Repeat with remaining quesadillas. Slice each quesadilla into 3 wedges and serve with salsa, guacamole and sour cream.
