Brochette with Caramelized Leeks & Feta Cheese

c. leeks, washed thoroughly and sliced 1/4-inch thick
Salt and pepper to taste
c. feta cheese
slices French baguette, toasted
- Heat butter in skillet over medium heat. Add leeks, salt and pepper; cook until leeks are caramelized. Remove from heat. Stir in cheese. Spoon evenly on toast slices.
- Preheat broiler and broil 3 minutes or until cheese is soft and hot.
